UK, summer, seasonal veg highlights I have delivered in the organic fruit and veg boxes in the past Month. I am loving the abundance of UK veg and fruit from local farms. We have been enjoying sweet yellow peppers, blueberries the most amazing cherries, leeks, tomatoes, radish, mixed salad, beetroot, kohl rabi to name just a few!
Next week's boxes have sweetcorn 🌽 so early in the season due to the heat wave last month caused the sweetcorn to double in size.

This weeks red potatoes sourced locally are so delicious "roasted" scrub and coat in oil, x2 crushed garlic cloves and bake for 40mins. Couldn't be simpler but I am still dreaming about them today!

UK Green beans are in season and are in the veg boxes next week.
I love this simple new potato, green beans and olive dish. Courtesy of @rivercottagehq @hughfearnleywhittingstall

You will need
🔸500g new potato
🔸200g green beans
🔸2 garlic cloves sliced
🔸50g stoned Black olives chopped (I used green olive because that's what I had in!)
🔸Handful of basil
🔸Squeeze of lemon
🔸Salt and pepper

To make it
1. Cut the potatoes into 2-3 chunks and add to a pan. Cover with water and season. Bring to a boil and then simmer for approx 8 minutes. Add the beans to the pan for the last 2-3 minutes of the cooking time and drain.

2. Meanwhile heat oil on a pan and add the sliced garlic don't let it colour. Stir in the olives for a minute more and then add to the potatoes and beans.

3. Add a squeeze of lemon juice, a handful of basil and salt and pepper. Serve warm.
